Wrap the head in a paper towel or beeswax wrapper and put into an airtight container. Only wash as you use or ensure it is dry before putting it in the fridge.



Blanch in sections for 2-3 minutes. Cool in ice water. Dry and freeze in an airtight container.

Use it up!

Don’t waste your broccoli! Remember the stalks are just as delicious and nutritious so don’t throw them away! Slice them up to use in stirfries, grate and use in place of cabbage for coleslaw or freeze them for a future stock. Find your inspiration:
