Dark cool pantry

Whole garlic heads are best stored in a wire mesh basket or open paper bag in a cool, dark cupboard. Once you break apart the cloves, transfer them to the fridge in a sealed container and use asap. Alternatively, confit the cloves in olive oil and store in a sealed jar together with the oil in your fridge.

Freezer?

Yes

Whole heads of garlic can be roasted and frozen to use in any recipe that calls for roasted garlic.

Use it up!

Use it up in soups, hummus, pizzas, stews or mix with some butter and serve on crusty bread.
